Pizza Peels: Your essential buying guide
Wooden pizza peels are often a practical choice for launching because dough is less likely to stick to the surface when lightly floured. A thin metal peel can also work well, especially if you prefer a slimmer edge, but it may need a little extra flour or semolina to help the base slide.
Choose wood if you want a peel that is forgiving with raw dough and can double as a serving board. Choose metal if you want a thinner, more durable edge for retrieving and turning cooked pizzas. Many home pizza makers keep one of each for different stages of cooking.
Pick a peel head that is slightly larger than the pizzas you usually make, while still fitting comfortably inside your oven or pizza oven. For compact ovens, check both the peel width and the handle length so you can manoeuvre it without knocking the sides.
Perforated pizza peels can help excess flour fall away before the pizza reaches the oven, which may reduce burnt flour on the base. They are usually metal, so they are also useful for quick turning and retrieving, but raw dough may need careful handling.
A short handle is convenient for standard kitchen ovens and easier to store. A longer handle gives more reach and keeps hands further from the heat when using deep or very hot pizza ovens, but it needs more space to use safely.
A good pizza peel makes the difference between confidently sliding a pizza into the oven and losing the shape before it cooks. Focus on material, size, edge profile and handle length so the peel suits both your oven and your pizza-making routine.
Wooden pizza peels are useful for stretching, topping and launching dough because the surface gives raw bases a little more grip without feeling too sticky. They also work well for serving at the table, especially if you like a rustic presentation.
Metal pizza peels are typically thinner at the edge, making them better for slipping under cooked pizzas and turning them during baking. Aluminium options are lightweight, while stainless steel can feel sturdier but may be heavier.
Measure the usable opening of your oven or pizza oven before choosing a peel. The head should support your pizza without being so wide that it catches on the oven sides.
If you make individual pizzas, a smaller peel can be easier to control. For larger family-sized pizzas, look for a wider head and a stable handle so the peel stays balanced when loaded.
For launching uncooked dough, a broad wooden peel or a well-floured metal peel can help keep the pizza supported. For turning while cooking, a thinner metal peel usually offers better access under the base.
If you want one tool for both cooking and serving, consider how it will look on the table and how easy it is to clean after contact with flour, sauce and melted cheese.
A tapered front edge makes it easier to slide under pizza bases without pushing toppings out of place. Rounded corners can also help when turning pizzas in smaller ovens.
Handle length affects safety and control. Short handles suit indoor ovens and compact storage, while longer handles are better for hotter, deeper ovens where you need extra reach.
Wooden peels should be kept dry and cleaned gently so the surface stays smooth. Metal peels are often easier to wipe clean, but very thin designs may bend if stored carelessly.
If kitchen space is limited, look for hanging holes, detachable handles or a slim profile that can be stored alongside trays, stones and other bakeware.
