Chefs Choice Knife Sharpeners: Your essential buying guide
For quick routine sharpening, a manual pull-through sharpener is often the simplest choice. If you want more control over the edge, a whetstone can be more precise, while an electric sharpener may suit busy kitchens where speed and consistency matter.
Honing helps realign a blade edge that has bent slightly through use, while sharpening removes a small amount of metal to create a fresh edge. A honing steel is useful for regular upkeep, but a proper sharpener is needed when a knife has become genuinely blunt.
Not always. Some sharpeners are designed for standard Western-style blades, while others may suit Japanese-style knives, serrated knives or specialist edges. Check the sharpener’s compatible blade types and sharpening angle before use.
Whetstones take more practice than pull-through sharpeners because you need to maintain a consistent angle. However, they offer excellent control and can be a good option if you want to sharpen different knives carefully rather than relying on preset slots.
It depends on how often you cook, the type of knife and the surface you cut on. If a knife starts slipping on food, crushing rather than slicing, or needing extra pressure, it is usually time to sharpen it. Regular honing can help extend the time between sharpening sessions.
The right knife sharpener depends on your knives, your skill level and how much maintenance you want to do. Focus on compatibility, ease of use and the finish you want on the blade edge.
Pull-through sharpeners are straightforward and usually have preset slots to guide the blade. They are a practical option if you want a quick, low-effort way to refresh everyday kitchen knives.
Whetstones offer more control and can produce a very refined edge, but they require patience and a steady sharpening angle. Sharpening steels are best for regular honing rather than restoring a very blunt blade.
Electric knife sharpeners can make the process faster and more consistent, especially if you sharpen often, though they may offer less hands-on control than a stone.
Before comparing sharpeners, think about the knives you use most. Chef’s knives, paring knives, carving knives and santoku knives may have different edge profiles or recommended sharpening angles.
If you own serrated knives, check whether the sharpener is suitable for serrations, as many standard sharpeners are designed only for straight-edged blades.
Some sharpeners use fixed angles, which makes them easier for beginners but less flexible for different blade styles. Others, such as whetstones, let you choose the angle yourself.
Multi-stage sharpeners may include coarse, medium and fine settings. Coarser stages help restore a dull edge, while finer stages polish and refine the finish for smoother cutting.
A comfortable handle, non-slip base or secure grip can make sharpening feel safer and more controlled. Stability is especially important when using pull-through or electric models on a worktop.
For compact kitchens, consider how easy the sharpener is to store. Smaller manual sharpeners take up little space, while whetstones and electric models may need dedicated storage.
Some sharpeners need very little upkeep, while whetstones may require soaking, flattening or careful drying depending on the type. Always clean away metal filings and follow the product’s care instructions.
Using the correct cutting board and storing knives safely can also help blades stay sharper for longer, reducing how often you need to sharpen them.
